It’s an impressive yet easy summer salad that’s ready in just 10 minutes!

Every summer, I wait for tomatoes and peaches to reach their peak because that’s when salads like this Tomato Peach Burrata Salad practically make themselves. There’s no cooking and no complicated dressing — just a handful of fresh, seasonal ingredients that were meant to go together.

If you’ve never paired peaches and tomatoes before, trust me on this one. The tomatoes are juicy and flavorful, the peaches add just the right amount of sweetness, and creamy burrata ties everything together. Finish it with fresh basil, good olive oil, flaky sea salt and a drizzle of balsamic glaze, and you’ve got a salad that feels a little special without requiring any extra effort.

It’s reminiscent of caprese salad with the same fresh basil, creamy cheese and ripe tomatoes, but sweet peaches make every bite even better.

Tomato Peach Burrata Salad

Ingredients

  • 3 large heirloom tomatoes any variety; sliced 1/4" thick; see note 1
  • 2 large peaches ripe yet firm; see note 2
  • 8 ounces burrata cheese see note 3
  • 1/2 cup cherry tomatoes halved
  • 1/3 cup freshly chopped basil
  • 2 tablespoons extra virgin olive oil add more as needed
  • balsamic glaze for drizzling
  • salt and freshly ground black pepper to taste

Instructions 

  • If the heirloom tomatoes are extremely juicy, place them on a couple layers of paper towels and blot the tops dry gently.
    3 large heirloom tomatoes
  • Arrange the sliced heirloom tomatoes and peaches on a large serving platter, seasoning each layer with salt and pepper to enhance the flavors.
    2 large peaches
  • Gently pat the burrata dry with paper towels, then break into pieces. Place the burrata evenly over the top of the tomatoes and peaches, then top with cherry tomatoes and chopped basil.
    8 ounces burrata cheese, 1/2 cup cherry tomatoes, 1/3 cup freshly chopped basil
  • Finish the salad by drizzling the olive oil and balsamic glaze over the top, and season with salt and pepper to taste. Serve immediately and enjoy!
    2 tablespoons extra virgin olive oil, balsamic glaze, salt and freshly ground black pepper

Notes

  1. Pro tip: If your tomatoes are especially juicy, lightly pat them dry with paper towels before assembling the salad.
  2. Use ripe peaches that are still slightly firm so they hold their shape.
  3. Burrata is best served at room temperature, so remove it from the refrigerator about 20-30 minutes before serving.
  4. Assemble the salad just before serving for the freshest flavor and texture.
