Recipe ingredients

- Potatoes. 1.5 lbs. baby gold potatoes, halved or quartered depending on size. Sub with fingerling potatoes, red potatoes, etc. This roasted potato recipe is easily scaled to feed a crowd.
- Oil. Promotes browning and helps the ranch seasoning adhere to the potatoes.
- Ranch seasoning. 1.5 tablespoons of homemade ranch seasoning blend provides an abundance of flavor, however, feel free to add up to ½ tablespoon more as desired. You can also sprinkle more over the top after the potatoes come out of the oven.
- Salt. The seasoning has salt in it already, however it’s not enough to season the potatoes substantially. I suggest adding an additional 1/2 teaspoon of salt and adding more as necessary.
- Pepper. Add 1/4 teaspoon or more to taste.

- Finish with extra seasoning (optional): A light sprinkle of ranch seasoning after roasting enhances flavor.
