Mini Crustless Broccoli Quiche
You won’t miss the pie crust in these Mini Crustless Broccoli Quiche! They’re packed with broccoli and cheddar cheese, plenty of protein, and are the perfect meal prep breakfast or brunch. They’re easy to make and include just 4 ingredients!
I love hosting a family brunch, but I’m not one to slave over a hot griddle flipping pancakes or making bacon and eggs to order.
For me, it’s all about recipes that not only feed a crowd, but they can be made entirely in advance like blueberry baked oatmeal and french toast casserole.
And instead of flipping or scrambling a bunch of eggs, I go the easier route and prepare bacon and egg casserole or asparagus frittata.
Classic quiche florentine is also a great make ahead brunch option, but when you want to take a lighter approach, these Mini Crustless Broccoli Quiche are the perfect thing.
They’re perfectly portioned, and mini sized dishes are always more fun. 🙂

There are only 4 ingredients in this mini crustless broccoli quiche, and most may be customized using ingredients that you already have on hand.
Ingredient notes
- Eggs. This crustless quiche may be lightened up by using using 4 whole eggs and 4 egg whites, or 8 egg whites.
- Broccoli. The instructions include cooking chopped broccoli florets, but you can certainly use broccoli in a microwaveable bag. Simply cook according to package instructions and chop when cool enough to handle.
- Milk. Any type of milk will work in this recipe — use whatever you have on hand!
- Cheese. Cheddar cheese may be substituted with your favorite!
How to make this recipe
This is the easiest quiche recipe that you’ll ever make! There’s no pie crust involved, and it includes only 10 minutes of prep.
I highly recommend using silicone baking molds, because they make it much easier to remove the crustless mini quiche. A link to the ones I use is included in the recipe, but if you prefer to use a muffin pan, be sure to grease the cups generously with cooking spray!
Pro tip: Use prepped broccoli in a microwaveable bag for a timesaver! Simply cook according to package instructions and chop when cool enough to handle.
- Preheat the oven to 375 degrees. Heat the olive oil in a large skillet over medium heat. Add the broccoli and cook for 5 minutes or until tender. Remove from heat.
- Place the eggs in a large measuring cup and whisk well to combine. Add the milk, grated cheese, salt and pepper and whisk until incorporated.
- Generously spray (12) silicone muffin cups or muffin pan with cooking spray and divide the cooked broccoli evenly between each.
- Pour the egg mixture into each muffin cup as evenly as possible.
- Bake the crustless mini quiche for 13-15 minutes, or until set (it’s ok if they have a slight wobble). Cool for 10 minutes on a wire rack, then remove from the molds and enjoy!

It’s great served raw with hummus or ranch dressing, and in salads like broccoli slaw salad and broccoli kale salad. Could I use mini muffin tins, and how long to bake them?
I’m sure you could, but it could be tedious getting them all out of the pan unless you have silicone or foil liners. They would probably bake up in half the time, so check for doneness at about 7 minutes.

I made these for Thanksgiving breakfast with a few tweaks. I steamed the broccoli, added red pepper and used gruyere cheese. I used parchment paper muffin cups which did not need cooking spray. They were a hit and everyone wants the recipe. This is so versatile, I can’t wait to try other variations!
