I’m so late to the buffalo chicken wing party.  The truth is that I never understood what the hype was surrounding buffalo wings.  Maybe I should’ve tried them sooner to find out??

Sometimes I’m a little slow.

This past summer my brother made a giant batch of buffalo chicken wings, and I absolutely loved them. He schooled me on the fine art of buffalo sauce, which I could’ve eaten with a spoon.

I got to work on my own recipe within the week, and naturally I added honey to my sauce because I’m a huge fan of sweet and spicy flavors. I haven’t been able to get enough of these Instant Pot Buffalo Chicken Wings since!

I was pretty late to the Instant Pot party too, but it’s become my most-loved kitchen appliance.  That’s saying a lot.

I love that the Instant Pot gives me the option of preparing my food at lightning speed or low and slow.  I developed this buffalo chicken wings recipe to take advantage of the Instant Pot’s powerful pressure cooker and slow cooker features.

Of course, you can also cook your wings in a conventional slow cooker or pressure cooker.

How to make Instant pot chicken wings

Out of the two cooking methods, I prefer the pressure cooker method, because the chicken wings are falling off the bone tender in a mere 8 minutes.

Yes…8 minutes.

  • Simply pour some water into the bottom of the Instant Pot or pressure cooker and place a heat proof trivet inside.
  • Season the wings and pile them on top of the trivet, secure the lid and cook for 8 minutes.

Slow cooker buffalo chicken wings

Now let’s discuss this easy slow cooker chicken wings recipe.  If you’re not in a hurry to get your chicken wings cooked, this slow cooker method is definitely a great option.

  • Simply season your wings and toss in 1/4 cup of the buffalo sauce and 1/4 cup of water and place in the Instant Pot or slow cooker.
  • Cook for 2 – 2 1/2 hours over high heat or until the meat begins to separate from the bone.

How to get crispy chicken wings

Once the chicken wings are finished cooking in either the pressure cooker or slow cooker method, they need to be placed under the broiler to crisp the skin.

  • Place the wings in a single layer on a foil-lined baking sheet and place on the middle rack of the oven under the broiler.
  • Broil the chicken wings for 3-5 minutes per side or until the skin is crisp and golden brown.  Keep a careful eye on the slow cooker chicken wings especially as they can burn more easily due to the honey buffalo sauce that they were cooked in.
  • Once crisped, remove from heat, cool slightly and place in a bowl.  Toss with the desired amount of warm honey buffalo sauce and serve!

Recipe notes

The Instant Pot Chicken Wings may be cooked in advance in either cooking method.  Store in the fridge, then place under the broiler and toss in the sauce.  Bear in mind that the wings will take longer to cook under the broiler when they’re cold.

Serve your chicken wings as-is or with a dip or dressing like my Greek Yogurt Ranch Dressing or your favorite store bought brand.

If you like a spicier sauce, add more buffalo hot sauce!

Instant Pot Honey Buffalo Wings

Ingredients

  • 1.5 lbs. chicken wings I used a party pack already prepped into drummettes and flats
  • garlic powder
  • salt and pepper to taste
  • 4 tablespoons unsalted butter
  • 6 tablespoons buffalo hot sauce I used Frank’s Red Hot Wings Buffalo Sauce
  • 2 tablespoons honey
  • Homemade No Mayo Greek Yogurt Ranch Dressing

Instructions 

Pressure Cooker method

  • Season the wings with garlic powder, salt and pepper to taste.
  • Place 1 cup of water in the bottom of the Instant Pot.  Place the trivet inside the Instant Pot and place the wings on top of the trivet.
  • Secure the lid and select the Pressure button and enter 8 minutes cooking time.  The Instant Pot will beep once it comes to pressure in about 15 minutes, then once again after the 8 minutes of cooking time.  When the wings are done cooking, quick release the pressure and remove the lid when safe to do so.
  • Preheat the broiler.  Place the wings in a single layer on a foil lined baking sheet.  Broil on the middle rack of the oven for 3-5 minutes per side or until the skin is golden brown and crisped.  Remove from heat.
  • Place the butter in small sauce pan and cook over medium low heat until melted.  Add the buffalo sauce and honey and cook until simmering, about 2-3 minutes.
  • Place the wings in a bowl and coat with the desired amount of sauce.  Serve immediately and enjoy!

Slow Cooker method

  • Place the wings in a large bowl and season with the desired amount of garlic powder, salt and pepper.
  • In a small bowl, melt the butter.  Add the buffalo sauce and honey and stir until combined.
  • Pour 1/4 cup of the sauce over the wings, followed by 1/4 cup of water, and toss to coat evenly (add a bit more sauce and water if using a larger amount of chicken wings).
  • Add the wings to the Instant Pot or slow cooker and secure the lid.  Select Slow Cook on High for 2 hours and remove the lid to check for doneness (the meat will begin separating from the bone when done).
  • Preheat the broiler.  Place the wings in a single layer on a foil lined baking sheet.  Broil on the middle rack of the oven for 3-5 minutes per side or until the skin is golden brown and crisped.  Remove from heat.
  • Heat the remaining buffalo sauce in the microwave or sauce pan and place the wings in a bowl.  Toss the wings with the desired amount of sauce, then serve immediately.  Enjoy!

Notes

  1. While both cooking methods will give you delicious wings, I prefer the pressure cooker method as the meat is falling off the bone tender!
  2. Wings may be cooked in the pressure cooker or slow cooker in advance, then broiled just before serving time.  They will take longer to crisp up when cold, so broiling time will be a little bit longer.
  3. I toned my sauce down a bit for my family, but if you like things spicier add even more buffalo hot sauce.
